It’s a take on berries and cream made with protein-dense cottage cheese that can be enjoyed after dinner, for breakfast, or as a mid-day pick-me-up.

The whipped cottage cheese portion of this recipe is super simple to make. Just add your plain cottage cheese to a food processor along with maple syrup (or honey) and vanilla bean paste to sweeten it up. Blitz in the processor until the cottage cheese is smooth — and that’s it!

You could also try to add more flavor to your whipped cottage cheese by adding in a bit of your favorite jam, a dash of chocolate hazelnut spread, or a spoonful of Greek yogurt (either plain or flavored).

Drummond tops her whipped cottage cheese with roasted mixed berries. To make these, she tosses a bag of frozen mixed berries in some brown sugar and puts them on a baking pan. She roasts them for just over 10 minutes until they’ve deepened in color and a fragrant syrup has formed.
